Coming back to Micmac's original question,
I don't see the issue with getting the stack to save with a custom icon on MacOS. Seems to work fine in Quicklook:

You are right Tom that one can get a sense of what the stack is in this way.
But if the stack is A4 sized and you want to see details, then Quicklook would be better.

It's here on GitHub, but hasn't been updated since 2020 (supports macOS Catalina):

But in general it seems that QuickLook 3rd party plug-ins is yet another Apple user-extensible technology that's on it's way to dustbin of history.
It's still possible to provide a custom preview for a filetype, but like I said they've changed how that API works in recent years, could be a bit of a moving target. I'll look into this some more when I have a chance. I do like the ability to QuickLook at files in the Finder.
