BBEdit on the Mac can do search and replace across multiple folders of files and knows how to deal with most types of source code. I don't believe it can edit binary files however, so you have to work on source files and then recompile.

I am already in long-term relationship with BBEdit (since about 1998).
It is a fantastic tool.
